In order to strengthen the Moulin Rouge’s kitchen brigade, we are looking for a Demi-Chef de Partie de Cuisine on a permanent contract, to be filled as soon as possible.

Position description
Join the Moulin Rouge’s kitchen brigade and enhance the experience of 350 guests every evening alongside Executive Chef Arnaud Demerville, member of the Maîtres Cuisiniers de France.
As a Demi-Chef de Partie de Cuisine, within a brigade of about thirty cooks and under the supervision of the Sous Chefs, your missions consist in particular of (non-exhaustive list):
- Participate in the culinary achievements that fall under your party;
- Guarantee the preparation and dispatch of the dinners served each evening within the establishment, in compliance with the technical sheets, hygiene standards and standards of the brand;
- Master the different manufacturing techniques used (cooking, cutting, etc.) and know all the dishes served at the Moulin Rouge;
- Participate in the procurement of your party and determine the material needs;
- Assist in checking the quality of deliveries, and ensure their storage in compliance with hygiene standards;
- Participate in the training and supervision of Commis de Cuisine and work-study students/trainees, and take charge, over short periods (holidays, weekends, etc.), of supervising the employees of his/her part;
- Apply the health and safety rules in force.
Your profile
Graduated from a hotel school (minimum BAC PRO), you have successful experience, ideally acquired in quality establishments, such as gastronomic and/or starred restaurants.
You have a perfect command of the rules of hygiene, safety and HACCP, as well as the culinary basics of French gastronomy.
To thrive in your role, you will have:
- Rigorous, responsive and have an eye for detail;
- An ability to approach services methodically, efficiently and responsively;
- Good team player and good communication skills.

The position:
Badged working time: paid overtime.
Hours: continuous (no breaks), morning or evening – 2 consecutive days off – contract at 39 hours per week.
Gross annual salary: €35,126
Location: in the cabaret’s kitchens, 82 boulevard de Clichy – 75018 Paris.
