In order to strengthen the Moulin Rouge’s restaurant brigade, we are looking for a Demi-Chef de Rang on a fixed-term contract for a period of 4 months, to be filled as soon as possible.

Position description
In the Moulin Rouge Restaurant, you will enhance the experience of 1,600 guests every evening and serve 350 dinners, imagined and prepared by our Executive Chef Arnaud Demerville, a member of the Maîtres Cuisiniers de France.
As a Demi-Chef de Rang, you join the largest brigade in France made up of a hundred professionals. Under the supervision of the Room Managers, your missions include (non-exhaustive list):
Before the service
- Proceed with the setting up of the tables according to the seating plan, and ensure the proper preparation of the consoles;
- Know the different menus offered: dishes, desserts, garnishes, contents, allergens and preparation methods;
- To welcome and place customers in the ranks, while creating a privileged contact.
During the service
- Take orders, advise customers, respond to their requests and, as far as possible, anticipate their needs;
- Serve customers (food and drinks) in a discreet and professional manner;
- Ensure the smooth running of the dinner service (set up, sending, advertising, clearing) by guaranteeing good communication with the Kitchen Brigade and by supervising and accompanying the Restaurant Commis of your rank;
- Conscientiously handle and maintain all equipment and small room equipment;
- To know and apply the regulations on hygiene and safety, and to ensure compliance with HACCP standards.
During and after the performances of the show
- Ensure a presence with customers in order to meet their needs;
- Straighten the tables for the second course;
- Report any malfunction and/or customer comments (positive or negative) to his/her line manager.
Your profile
Graduated from a hotel school (CAP or BAC PRO), you have a successful experience, ideally acquired in quality establishments, such as gourmet restaurants and/or luxury brasseries.
You have a perfect command of the techniques of room service (taking orders, serving food and drinks, customer advice, payment, etc.). In addition, you have a solid knowledge of products and beverages.
Knowledge of English is essential for this position. A third language is appreciated.

The position:
Badged working time: paid overtime.
Night hours, from 5:45 p.m. to 1:45 a.m. – contract at 35 hours per week – 2 consecutive days off.
Gross annual salary: €37,112
Location: within the cabaret, 82 boulevard de Clichy – 75018 Paris -> please note that the return journey is the responsibility of the employee.
