Position description
The Executive Chef, Arnaud DEMERVILLE, together with the Kitchen & Patisserie brigade, prepare and send out the 350 or so dinners served each evening in our establishment.
In order to provide our customers with top-quality cuisine, made with fresh produce, your tasks, under the direction of Executive Chef Arnaud DEMERVILLE, are to :
- Supervise the rhythm and quality of work in the kitchen and ensure that dishes are prepared in compliance with hygiene and quality standards, as well as technical sheets and recipes ;
- Manage the busy times in the Kitchen, particularly service times ;
- Assist, organize and supervise the kitchen team ;
- Master the various production and cooking techniques used ;
- Supervise supplies and equipment requirements and be able to manage orders for each division ;
- Play an active role in monthly stock-taking ;
- Participate in the integration, management and skills development of the brigade ;
- Apply hygiene rules.
All these tasks must contribute to guaranteeing the image of the brand and the cabaret, by offering customers quality cuisine presented in an impeccable manner.
Your profile
With a hotel and catering background (minimum BAC PRO – vocational baccalaureate), you have successful experience as a 1st Chef de Partie in quality establishments such as gourmet and/or Michelin-starred restaurants, luxury brasseries or 4/5 star hotels.
You will also need initial experience of managing a brigade.
You are perfectly familiar with hygiene and HACCP rules.
You are familiar with French gastronomy and are able to handle service with method and efficiency.
You are an excellent cook, reactive, determined, motivated and rigorous. You know how to manage a team and have a sense of pedagogy.
Contract
Full-time permanent contract – 39 hours per week – to be filled as soon as possible.
Work on weekends and public holidays.
Periods of 5 working days – 2 consecutive days off.
Hours : continuous, mornings or evenings.
Salary : €3,025 gross per month.
Benefits : no cut-off, health insurance, 50% transport reimbursement, meal card, 13th month, Business and Social Council.
Job based at Bal du Moulin Rouge, 82 Boulevard de Clichy – 75018 PARIS.
