We are looking for a Pastry Demi-Chef de Partie for a full-time fixed-term contract, to be filled as soon as possible and until 31st December 2024.

Position description

The Executive Chef, Arnaud DEMERVILLE, accompanied by the Kitchen and Patisserie brigade, prepare and dispatch the 350 or so dinners served each evening in our establishment.


In order to provide our customers with quality cuisine, made with fresh, seasonal produce, your duties, under the supervision of the Executive Chef and the Sous-Chefs Pâtissiers, are to :


  • Participate in the culinary creations that fall within your remit ;
  • Ensure that the 350 or so desserts served in the restaurant each evening are prepared and dispatched in accordance with the technical specifications, hygiene standards and the brand’s standards ;
  • Master the various production techniques used (cooking, cutting, etc.) and be familiar with all the desserts served at the Moulin Rouge ;
  • Ensure supplies for your section and determining equipment requirements ;
  • Help to receive and check the quality of deliveries, and store them in compliance with hygiene standards ;
  • Participate in the training and management of Pastry Clerks and alternates/interns, and take charge, for short periods (holidays, weekends, etc.), of supervising the staff in your area ;
  • Apply the health and safety rules in force.


All these tasks must contribute to guaranteeing the image of the brand and the cabaret, by offering customers quality cuisine presented in an impeccable manner.

Your profile

With a background in pastry-making (CAP/BEP and/or Bac Pro and/or MC Restaurant Dessert), you will have significant experience in a similar role or as a Pastry Chef in quality establishments such as luxury brasseries or gourmet and/or Michelin-starred restaurants.


You have a thorough knowledge of hygiene and HACCP rules.


You are familiar with French gastronomy and its various production techniques, and you have an eye for detail.


You are an excellent pastry chef, responsive, willing, motivated and rigorous. You’re a good listener and adaptable. You’re able to approach services methodically and efficiently, and have a flair for teaching.


Fixed-term permanent contract – 39 hours per week – to be filled as soon as possible and until 31st December 2024.

 Work on weekends and public holidays.

Periods of 5 working days – 2 consecutive days off. Hours : continuous, mornings or evenings.

Salary : according to profile.

Benefits : no cut-off, health insurance, 50% transport reimbursement, meal card, 13th month, Business and Social Council.
